It's everything you love about the Cajun classics in a portable, pie crust.

Sometimes you stumble across a match made in heaven in the kitchen. For Harold Schexsnayder and Judy Harmon, that's exactly what happened. Harold is a pastry maker, while Judy is a seft-taught Creole and Cajun cook. What happens when you combine their two powers for good?

Cajun fried pies.

As The Advertiser puts it, "Imagine spicy boudin, crawfish or corn maque choux in a portable, flaky pie crust." Harold and Judy, both natives of Opelousas, Louisiana created the Louisiana Pie Peddlers just a few months ago and plan on taking over the festival and fair circuit this year.

The pies feature fillings like boudin, crab, crawfish, smothered okra and tomato, corn maque choux, chicken, Cajun-Creole meat and Tex-Mex meat. If you're looking for something sweet, they've got you covered with fig, sweet potato, apple, lemon, chocolate, and cheesecake. But they're not done yet as they are working on alligator, shrimp, jambalaya, catfish, rabbit, and venison. The goal is to get all of Louisiana in these pies. And the two make a great team, according to Harol.

"We're a good team. She's amazing in the kitchen. We're just so excited about the pastry and the fillings, and we just want to promote the Louisiana aspect of it all. That's why there's the unusual fillings. Once you taste it, it's unbelievable."
