Don't think you have to start from scratch to make a mouth-watering cake.

First off, let me just say that I think my mother in law is out to make me gain 60 pounds every time I come to visit. She is a phenomenal cook and is so clever when it comes to desserts. And trust me, there is always a dessert or two waiting for you when you walk through the door.

Over the weekend, she had the most decadent green cake in her fridge. Wait, did you say "green" Jess? Yep. Green. Pistachio green. It was light and sweet and completely intoxicating. I think I ate half of the pan. It must have taken her hours to make such a unique flavor of cake, right?

Nope.

In fact, this cake was a box cake mix that she doctored up with good ol' instant pudding mix. I'm not even joking. Just white cake mix with pistachio pudding mix. Now the topping was Cool Whip that had also been mixed with the same pudding mix. And. It. Was. Divine.

Easy as 1-2-3:

1 Box of white cake mix (and whatever the recipe on the box calls for)

2 Pistachio pudding mix

3 Tubs of Cool Whip (to be used for the icing)

One pudding mix goes into the cake batter. The other mixes with the Cool Whip for the topping. Now maybe you don't need three tubs to cover a 9x13 pan of cake, but you can certainly freeze that extra tub and enjoy it after everyone's gone to bed. (I'm a sucker for frozen Cool Whip).

This got me thinking that there are endless flavor combinations you can use this recipe for. Maybe pistachio cake and chocolate topping, or chocolate cake and banana topping. You can get so creative with this simple cake recipe. And I'm telling you, this is definitely a wow-factor at any get together.
