
Shreveport’s Most Underrated Burger, The Brasserie Burger at Fat Calf
When you think of a "Louisiana food paradise," your mind probably jumps straight to the gumbo pots of New Orleans. But those of us living in the 318 know that Shreveport is holding its own, especially when it comes to chefs who aren't afraid to get creative.
One of my absolute favorite spots to visit is Fat Calf Brasserie. Now, if you’ve been there, you already know the "Golden Rule": never skip the Brussels sprouts. They are quite literally the best in the world, flash-fried and tossed in a Korean vinaigrette with pumpkin seeds, golden raisins, and Maldon salt. They are salty, sweet, and perfectly crunchy.
But on my most recent trip, I decided to move past the (admittedly wonderful) pork belly appetizer and try the true underdog of the menu: The Brasserie Burger.
If you think a burger is a "basic" choice, you haven't had this one. Chef Anthony Felan and his team use Rosewood Wagyu, which makes every bite melt-in-your-mouth tender. They layer it with a savory bacon and smoked onion jam, black garlic aioli, aged Gouda, and fresh arugula, all tucked into a buttery brioche bun. It’s served with a side of herb frites that are dangerously addictive.
This isn't just a "cheeseburger", it’s upscale comfort food at its finest. It’s the kind of dish that makes you realize you don't need a white tablecloth to have a five-star meal.
