Every year around this time, the Crème de la Crème of Louisiana chefs start honing their skill-set and working out the kinks in their new recipes in preparation for the biggest battle of their careers - the Louisiana Seafood Cook-Off in June.

It may be the preliminary competition to the Great American Seafood Cook-Off set for August - but to Louisiana seafood chefs, it's basically the Super Bowl.  12 of the best seafood chefs in the world (who just all happen to live in the same, delicious state) will face off at the Cajundome Convention Center in Lafayette.
