Shreveport Eatery is Serving the Best Damn Fried Chicken

The excitement has been building for quite some time, Executive Chef Blake Jackson has renovated a gorgeous space in the Provenance neighborhood. When you walk up you will see Mae & Co.'s epic motto, “cluck. shuck. bottoms up.“. The place is already bustling and people in South Shreveport are already eyeing this spot to be the after-work hang who doesn't want to experience an oyster bar highlighting Louisiana-themed cocktails?
I was lucky enough to step in during a soft opening, which was a reservation-only type event so the staff could get acclimated and familiar with the menu.
The bar is epic and all the draft taps are Louisiana beers, and the cocktail menu is so awesome you will want to try every single cocktail. The Southern Sipper was properly named who doesn't love bourbon and tea? I am a sucker for mezcal, so I had to also try the Bouidini which is perfect for mezcal lovers. Think of a mezcal margarita with yummy egg foam on top, I know I can't do this drink justice, you have to try it. Think of the best smoky margarita you can have, this is it.
What Caught My Attention Was the Fried Chicken, It Had its Very Own Section on the Menu.
I must admit I was very skeptical, I love Chef Blake's food, but come on, collard greens and fried chicken are not easy to hit the mark on. Do I think that Southern Classic reigns supreme? Yes. I went ahead and ordered the fried chicken since no one around me had ordered it and I was curious.
This fried chicken is the best damn fried chicken I have ever had in Shreveport. It was juicy and perfectly seasoned, I saw the portion which was big enough for two and I am not ashamed to say that I finished my meal. Yes, you should go for the experience, and to support a local eatery. However, if you don't go and try the fried chicken and collard greens you are not a true American. Chef Blake, you win again.
Mae & Co. will be open to the community on Tuesday August 27th, and hours will be Tuesday-Saturday. The eatery is located in the Provenance Community. Be on the lookout, rumor has it that Chef Blake is opening another spot next door that is more of a southern fine dining experience and it's target opening date is sometime in October.
