You won’t be able to find live crawfish in the area for another week or so, and once they do arrive, prices will be high, but the prices will begin to drop as the temperatures climb in South Louisiana.
Our state accounts for more than 90 percent of U.S. crawfish production. Steven Minville with the Louisiana Crawfish Board says he expects prices to be high through most of March, but he encourages you to continue to buy Louisiana grown mudbugs.

Herby-K’s has been in business for more than 75 years and is still in the same family. Of course, the Pierre Avenue business is famous for the Shrimp Buster, but you won’t find a much better bowl of crawfish etoufee in this region.
