I'll never forget where I had my first Louisiana-style crawfish pistolette. We were on the way home from an LSU Football game and they had them at an Exxon gas station on the side of 190 in Port Barre, LA. Now, I get them every time I head to Baton Rouge or New Orleans. They're truly that addictive.

What's a pistolette?

A pistolette is a football-shaped brown 'n serve bread roll also known as a French roll. You can get them at pretty much any grocery store in Louisiana. You can also use baguettes. But what makes them a pistolette is when you fry the bread and stuff it with some creamy Cajun goodness. You can use shrimp, crawfish, alligator, pretty much any protein you want, but in this particular instance, we're going to learn how to make Louisiana-style crawfish pistolettes.

What ingredients do you need to make Louisiana-style crawfish pistolettes?

To make pistolettes, you'll need the following:

  • A stock pot
  • A cast iron skillet
  • Pistolette bread
  • A red and green bell pepper
  • A yellow onion
  • Celery
  • Green onion
  • Butter
  • Flour
  • Oil
  • Half and Half
  • Cajun seasoning of your choice
  • Crawfish tails - make sure they're Louisiana-raised
  • Shredded cheese of your choice
