Easy, Last Minute Corn Dish That Will Wow Your Thanksgiving Host [RECIPE]
Four ingredients in one pot. Does it get any easier than that?
Thanksgiving is almost here. I can already taste that Cajun-fried turkey that my uncle makes... Mmmmm! If you're headed to a Thanksgiving dinner and looking for a super easy side dish that will wow everyone at the table, I've got something from my family to yours.
My family has several dishes that pop up each and every year. This year, I'm bringing one of my favorites and it's super easy to make. It's creamy, jalapeno corn and you'll need just four ingredients to make it: one bag of frozen sweet corn, one stick of cream cheese, one stick of butter and jarred jalapenos to taste. You can double and triple the amount as needed.
Start by defrosting the corn in the microwave (this can also be done the night before). Meanwhile, throw the butter and cream cheese in the pot and start to melt them down, stirring occasionally. You want to melt them slowly to prevent burning, but also so you can chop up the jalapenos while that's happening. The amount of jalapenos you use will depend on how spicy you want your corn. Once the butter and cream cheese are melted, dump in your defrosted corn and add your jalapenos. Stir until well combined and the heat level is to your liking.
And that's it!
To make this even easier, you can substitute the jalapenos for a can of diced green chiles or Ro-Tel. Just drain and add them in like you would the jalapenos. This is best served hot, but it's also delicious when pulled out of the refrigerator in the middle of the night and eaten directly out of the container. It's fast. It's easy. And I promise it will become a dish that people will ask for in the years to come.
