Man, I love breakfast. It's easily my favorite meal ever. That's why, even as a 1st meal aficionado, I was shocked to learn that we live just 2 short hours from the official Pancake Capitol of Texas! Grab your Maple syrup and jump in the car - we're headed to Hawkins, Texas.
Just over a hundred miles away from Shreveport sits peaceful Hawkins, Texas. This little Texas town is the home of around 1,300 residents and one hefty title. According to KETK, Texas legislators designated Hawkins as the official pancake capitol of the Lone Star State back in 1995. Why? Because the woman who looked over and improved countless pancake breakfasts was born there.
Lillian Richard was a Hawkins resident hired to portray the iconic Aunt Jemima for the Quaker Oats Company. She was hired back in 1925, and was America's pancake boss for 23 delicious years. She left such a positive impact on her community, the town is carrying on her legacy with more than a dozen awesome places to get pancakes within the city limits. On top of that, Hawkins hosts an annual pancake festival in April that is a breakfast lover's dream come true!
